Father’s Day Dinner: Crispy-Skin Salmon for the Win

Ingredients: 

Two 6 oz skin-on salmon fillets 

Kosher salt + freshly cracked black pepper 

1 tbsp high-heat oil (like avocado or grapeseed) 

1 tsp ghee (clarified butter) 

Directions: 

Pat the salmon fillets completely dry. Lightly score the skin with a sharp knife—just through the skin, not the flesh. This helps prevent curling and promotes even crisping. 

Generously season both sides of the salmon with salt and pepper. Let sit at room temperature for 5–10 minutes. 

Place your fry pan over medium-high heat. Add the oil and let it shimmer, then swirl in the ghee for extra flavor and browning. 

Carefully place the salmon skin-side down into the hot pan. Press gently with a spatula for 10 seconds to keep it flat. Let it cook undisturbed for 5–7 minutes until the skin is golden and crispy. 

Flip the salmon and cook for another 2–3 minutes until just cooked through.
